Ingredients

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes, with juices
  • 1 package (16 oz) potato gnocchi
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
  2. Add the carrots, celery, and zucchini. Cook for about 5 minutes until the vegetables start to soften.
  3. Stir in the dried thyme and basil, and cook for another minute until fragrant.
  4. Pour in the vegetable broth and diced tomatoes. Bring to a simmer.
  5. Add the gnocchi and cook according to package instructions, usually about 2-3 minutes until they float to the top.
  6. Stir in the fresh spinach and cook until wilted. Season with salt and pepper to taste.
  7. Serve hot, topped with grated Parmesan cheese if desired.
