- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 4 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes, with juices
- 1 package (16 oz) potato gnocchi
- 2 cups fresh spinach
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
- Add the carrots, celery, and zucchini. Cook for about 5 minutes until the vegetables start to soften.
- Stir in the dried thyme and basil, and cook for another minute until fragrant.
- Pour in the vegetable broth and diced tomatoes. Bring to a simmer.
- Add the gnocchi and cook according to package instructions, usually about 2-3 minutes until they float to the top.
- Stir in the fresh spinach and cook until wilted. Season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese if desired.
