- 1 lb boneless chicken breast, cut into bite-sized pieces
- 1/2 cup grated parmesan cheese
- 2 cloves garlic, minced
- 1 cup panko breadcrumbs
- 1 egg, beaten
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1 cup Alfredo sauce
- 1 tsp Cajun seasoning
- 2 cups fresh spinach leaves
- 1/4 cup flour
- 1/4 tsp paprika
Instructions
- Preheat oven to 375°F.
- Mix parmesan, garlic, breadcrumbs, salt, and pepper in a bowl.
- Dip chicken pieces in beaten egg, then coat with breadcrumb mixture.
- Place chicken on a baking sheet and drizzle with olive oil. Bake for 20 minutes or until golden and cooked through.
- Heat Alfredo sauce in a saucepan and stir in Cajun seasoning.
- Toss spinach with flour and paprika, then bake on a separate tray for 10 minutes until crispy.
- Serve chicken bites with Cajun Alfredo sauce and crispy spinach twists.
Notes
- For extra crispiness, broil chicken for the last 2 minutes.
