Ingredients

  • 4 medium potatoes, diced
  • 3 cloves garlic, minced
  • 1/4 cup grated parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F.
  2. Toss diced potatoes with 1 tbsp olive oil, paprika, salt, and pepper.
  3. Spread potatoes on a skillet and roast for 20 minutes.
  4. Season chicken with salt, pepper, and thyme.
  5. Heat remaining oil in the skillet, add chicken, and cook for 5 minutes per side.
  6. Sprinkle minced garlic and parmesan over chicken and potatoes.
  7. Return skillet to oven and bake for 10 minutes.
  8. Garnish with fresh parsley before serving.
