A one-pan dish with crispy garlic parmesan chicken and roasted potatoes.
Ingredients

- 4 boneless, skinless chicken breasts
- 4 medium potatoes, diced
- 3 cloves garlic, minced
- 1/4 cup grated parmesan cheese
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 400°F.
- Toss diced potatoes with 1 tbsp olive oil, paprika, salt, and pepper.
- Spread potatoes on a skillet and roast for 20 minutes.
- Season chicken with salt, pepper, and thyme.
- Heat remaining oil in the skillet, add chicken, and cook for 5 minutes per side.
- Sprinkle minced garlic and parmesan over chicken and potatoes.
- Return skillet to oven and bake for 10 minutes.
- Garnish with fresh parsley before serving.
Notes
- Use a cast-iron skillet for even cooking.
- Check chicken internal temperature reaches 165°F.
- Adjust seasoning to taste.
