- 1.5 lbs baby potatoes, halved

- 2 tbsp chopped fresh parsley
Instructions
- Preheat oven to 400°F.
- Toss potatoes with 2 tbsp olive oil, paprika, thyme, salt, and pepper.
- Arrange potatoes on a baking sheet and roast for 20 minutes.
- Rub chicken with remaining olive oil, garlic, salt, and pepper.
- Add chicken to the baking sheet with potatoes.
- Sprinkle parmesan over everything and bake for 20 more minutes.
- Garnish with parsley before serving.
