Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups broccoli florets
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)
  • 1 tbsp lemon juice

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Add chicken breasts, season with salt and black pepper, and cook for 5-6 minutes per side until fully cooked.
  4. Remove chicken from the skillet and set aside.
  5. In the same skillet, add broccoli and cook for 3-4 minutes until slightly tender.
  6. Add spinach and cook for another 2 minutes until wilted.
  7. Return chicken to the skillet, sprinkle with red pepper flakes if using, and drizzle with lemon juice.
  8. Stir everything together and cook for an additional 1 minute.
  9. Serve hot.
