- 1 lb baby potatoes, halved
- 3 tbsp butter
- 4 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1/2 tsp paprika
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, salt, pepper, and paprika. Spread on a baking sheet and roast for 25 minutes.
- Heat butter in a skillet over medium-high heat. Add steak bites and cook for 2-3 minutes per side.
- Add minced garlic and thyme to the skillet. Cook for 1 more minute.
- Mix the steak bites with the roasted potatoes.
- Garnish with fresh parsley and serve hot.
Notes
- Use a meat thermometer to ensure steak reaches 145°F for medium doneness.
- For crispier potatoes, broil for 2-3 minutes after roasting.
