Ingredients

  • 12 oz rigatoni pasta
  • 1 lb shrimp, peeled and deveined
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 2 cups fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 1 ball burrata cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Cook rigatoni according to package instructions. Drain and set aside.
  2. Heat olive oil in a large pan over medium heat. Add shrimp and cook for 2-3 minutes per side. Remove shrimp and set aside.
  3. In the same pan, melt butter. Add garlic and sauté for 1 minute.
  4. Add spinach and cook until wilted.
  5. Pour in heavy cream and stir in parmesan cheese. Simmer for 2 minutes.
  6. Return shrimp to the pan and add cooked pasta. Toss to coat.
  7. Top with burrata cheese before serving.
