- 1 whole chicken, cut into pieces
- 2 cups buttermilk
- 2 cups all-purpose flour
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional for heat)
- Vegetable oil for frying
Instructions
- In a large bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
- Add the chicken pieces to the buttermilk mixture, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best results.
- In a separate bowl, mix the flour with a pinch of salt and pepper.
- Heat vegetable oil in a large skillet or deep fryer to 350°F (175°C).
- Remove chicken from the buttermilk and let any excess drip off. Dredge each piece in the flour mixture, pressing lightly to adhere.
- Fry the chicken in batches, being careful not to overcrowd the pan. Cook for about 15-20 minutes, turning occasionally, until golden brown and cooked through (internal temperature should reach 165°F/74°C).
- Remove the chicken from the oil and drain on paper towels. Allow to rest for a few minutes before serving.
Notes
- For extra crunch, double dip the chicken by returning it to the buttermilk and then to the flour again before frying.
