Description
These vibrant Firecracker Popsicles are a fun and refreshing treat perfect for summer! Made with layers of sweet and tart flavors, they are sure to be a hit at your next gathering.

- 1 cup Blueberry Layer (fresh or frozen blueberries)
- 1/2 cup Blueberry Juice
- 1 cup Coconut Layer (coconut milk)
- 1 cup Strawberry Layer (fresh or frozen strawberries)
- 1/2 cup Strawberry Juice
- to taste Honey or Maple Syrup (optional for added sweetness)
- 6 Popsicle Molds (for freezing)
- 6 Wooden Sticks (for popsicle handles)
Instructions
- In a blender, puree the blueberries until smooth. Strain through a fine mesh sieve to remove skins if desired. Mix in blueberry juice and sweeten to taste.
- In a bowl, combine coconut milk and sweeten to taste with honey or maple syrup.
- In the blender, puree the strawberries until smooth. Strain through a fine mesh sieve if desired. Mix in strawberry juice and sweeten to taste.
- Pour the blueberry mixture into the bottom of the popsicle molds, filling them about a third of the way. Insert popsicle sticks and freeze for about 1-2 hours or until set.
- Once the blueberry layer is set, pour in the coconut layer, filling the molds another third of the way. Freeze for another 1-2 hours.
- Finally, pour in the strawberry layer to fill the molds. Insert the sticks if not already inserted. Freeze until fully solid, about 4-6 hours or overnight.
- To remove the popsicles, run warm water over the outside of the molds for a few seconds, then gently pull the popsicles out.
Notes
- Feel free to adjust the layers to your taste preferences.
- These popsicles can be stored in the freezer for up to 2 months.
