  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika

  • 1 cup bell peppers, chopped (red, green, and yellow)
  • 1 cup corn (fresh or frozen)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together chili powder, cumin, paprika, salt, and pepper.
  3. Rub the spice mixture all over the chicken breasts.
  4. In a large oven-safe skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear for 3-4 minutes on each side until golden brown.
  5. Remove the chicken from the skillet and set aside. In the same skillet, add the chopped bell peppers and corn. Sauté for 2-3 minutes until slightly softened.
  6. Stir in the black beans and salsa, mixing well. Return the chicken to the skillet and spoon some of the mixture over the top.
  7. Sprinkle shredded cheese over the chicken and vegetables.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  9. Remove from the oven and let it rest for a few minutes. Garnish with fresh cilantro before serving.
