- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup bell peppers, chopped (red, green, and yellow)
- 1 cup corn (fresh or frozen)
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup salsa
- 1 cup shredded cheese (cheddar or Mexican blend)
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix together chili powder, cumin, paprika, salt, and pepper.
- Rub the spice mixture all over the chicken breasts.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear for 3-4 minutes on each side until golden brown.
- Remove the chicken from the skillet and set aside. In the same skillet, add the chopped bell peppers and corn. Sauté for 2-3 minutes until slightly softened.
- Stir in the black beans and salsa, mixing well. Return the chicken to the skillet and spoon some of the mixture over the top.
- Sprinkle shredded cheese over the chicken and vegetables.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Remove from the oven and let it rest for a few minutes. Garnish with fresh cilantro before serving.
