Ingredients

Scale
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 sweet potato, peeled and diced
  • 1 cup Brussels sprouts, halved
  • 1 red onion, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup dried cranberries

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and liquid is absorbed.

  6. Garnish with fresh parsley before serving.
