- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup crumbled Cotija cheese
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- Juice of 1 lime
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Preheat grill to medium-high heat.
- Place the corn on the grill and cook, turning occasionally, until charred and tender, about 10 minutes.
- While the corn is grilling, mix together the mayonnaise, sour cream, Cotija cheese, chili powder, garlic powder, and lime juice in a bowl.
- Once the corn is cooked, remove it from the grill and let it cool slightly.
- Brush the corn with the mayonnaise mixture, ensuring it’s well coated.
- Sprinkle additional Cotija cheese and cilantro on top for garnish.
- Serve with lime wedges on the side.
