- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (panko recommended)

- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- Cooking spray or olive oil spray
Instructions
- Preheat your air fryer to 400°F (200°C).
- In three separate bowls, set up your breading station: one with flour, one with beaten eggs, and one with breadcrumbs mixed with garlic powder, onion powder, salt, pepper, and paprika.
- Dredge each eggplant slice in flour, shaking off the excess, then dip it in the beaten eggs, and finally coat it with the breadcrumb mixture, pressing gently to adhere.
- Arrange the breaded eggplant slices in a single layer in the air fryer basket. Spray lightly with cooking spray or olive oil spray.
- Air fry for 10-12 minutes, flipping halfway through, until the eggplant is golden brown and crispy.
- Remove from the air fryer and serve immediately with your favorite dipping sauce.

- For added flavor, you can mix grated Parmesan cheese into the breadcrumb mixture.
