Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash and dry all vegetables.
  2. Combine mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and olives in a large bowl.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad and toss gently.
  5. Serve immediately.
