- 4 whole wheat tortillas
- 1 cup hummus
- 2 cups mixed greens (spinach, arugula, etc.)
- 1 cup shredded carrots
- 1 cup sliced cucumbers
- 1 cup diced bell peppers
- 1 cup cooked and shredded chicken (optional)
- Salt and pepper to taste
- Olive oil (for drizzling)
Instructions
- Lay out the whole wheat tortillas on a clean surface.
- Spread a generous layer of hummus on each tortilla, leaving a small border around the edges.
- Layer mixed greens, shredded carrots, sliced cucumbers, and diced bell peppers evenly across the tortillas.
- If using, add the shredded chicken on top of the veggies.
- Season with salt and pepper, and drizzle a little olive oil if desired.
- Starting from one edge, carefully roll the tortilla tightly to form a wrap.
- Slice each wrap into pinwheels or halves for easier handling.
- Serve immediately or wrap in foil for a packed lunch.
