Ingredients

  • 4 whole wheat tortillas
  • 1 cup hummus
  • 2 cups mixed greens (spinach, arugula, etc.)
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • 1 cup diced bell peppers
  • 1 cup cooked and shredded chicken (optional)
  • Salt and pepper to taste
  • Olive oil (for drizzling)

Instructions

  1. Lay out the whole wheat tortillas on a clean surface.
  2. Spread a generous layer of hummus on each tortilla, leaving a small border around the edges.
  3. Layer mixed greens, shredded carrots, sliced cucumbers, and diced bell peppers evenly across the tortillas.
  4. If using, add the shredded chicken on top of the veggies.
  5. Season with salt and pepper, and drizzle a little olive oil if desired.
  6. Starting from one edge, carefully roll the tortilla tightly to form a wrap.
  7. Slice each wrap into pinwheels or halves for easier handling.
  8. Serve immediately or wrap in foil for a packed lunch.
