- 1 lb (450g) boneless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 cups mixed vegetables (bell peppers, zucchini, and corn recommended)
- 1 cup cooked rice or quinoa
- 1/4 cup soy sauce or teriyaki sauce
- 1 tablespoon sesame seeds (optional)
- Fresh parsley or cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces and season with garlic powder, onion powder, salt, and pepper. Cook for 5-7 minutes until chicken is browned and cooked through.
- Stir in the mixed vegetables and cook for an additional 4-5 minutes until vegetables are tender.
- Add cooked rice or quinoa and soy sauce or teriyaki sauce to the skillet. Mix well to combine and heat through for another 2-3 minutes.
- Remove from heat and sprinkle with sesame seeds if using. Garnish with fresh parsley or cilantro before serving.

- Feel free to swap in your favorite vegetables based on seasonality.
- This dish can be served over a bed of greens for a lighter option.
