Ingredients

- 8 oz pasta (penne or fettuccine)
- 2 cups fresh spinach
- 1 cup sliced mushrooms
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 cup grated parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 1/2 cup vegetable broth
Instructions
- Cook pasta according to package instructions, then drain.
- Heat olive oil in a large pan over medium heat.
- Add garlic and sauté for 30 seconds.
- Add mushrooms and cook for 3-4 minutes until softened.
- Stir in spinach and cook until wilted.
- Pour in vegetable broth and simmer for 2 minutes.
- Add cooked pasta, salt, pepper, and red pepper flakes (if using).
- Toss everything together and sprinkle with parmesan cheese before serving.

- Use gluten-free pasta for a gluten-free version.
- Add grilled chicken or shrimp for extra protein.
- Substitute vegetable broth with white wine for a richer flavor.
