Ingredients

- 2 cups corn kernels (fresh or frozen)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine corn, cherry tomatoes, cucumber, red onion, and cilantro.
- In a separate small bowl, whisk together olive oil, lime juice, salt, and pepper.
- Pour the dressing over the salad and toss until well combined.
- Serve chilled or at room temperature.
Notes
- This salad can be made a few hours in advance; just keep it refrigerated until serving.
- Feel free to add avocado or bell peppers for extra flavor and nutrition.
