Ingredients

- 4 cups stale bread, cubed
- 4 ripe tomatoes, chopped
- 1 cucumber, sliced
- 1 red onion, thinly sliced
- 1/4 cup fresh basil, torn
- 2 tbsp capers
- 1/3 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- Salt and pepper to taste
Instructions
- Combine bread, tomatoes, cucumber, red onion, basil, and capers in a large bowl.
- Whisk olive oil and vinegar together in a small bowl.
- Pour dressing over salad and toss gently.
- Season with salt and pepper.
- Let sit for 15 minutes before serving.
