- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 large egg
- 12 vanilla wafer cookies

Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
- Place one vanilla wafer at the bottom of each liner.
- Beat cream cheese, sugar, and vanilla until smooth.
- Add egg and mix until just combined.
- Spoon the mixture over the wafers, filling each about 3/4 full.
- Bake for 15-18 minutes until set.
- Cool completely before adding toppings. Refrigerate for at least 1 hour before serving.
