Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup corn kernels (fresh or frozen)
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
  2. Add the chopped onion and garlic to the skillet. Cook until the onion is translucent, about 3-4 minutes.
  3. Stir in the bell pepper, diced tomatoes, corn, chili powder, cumin, salt, and pepper. Mix well and bring to a simmer.
  4. Reduce heat to low and let it cook for 10 minutes, stirring occasionally.
  5. If desired, sprinkle shredded cheese on top and cover until melted.
  6. Serve warm, garnished with fresh cilantro if desired.
