A quick and easy one-pan meal made with ground beef, vegetables, and seasonings that comes together in under 30 minutes.

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 cup corn kernels (fresh or frozen)
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- Fresh cilantro for garnish (optional)
Instructions
- In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
- Add the chopped onion and garlic to the skillet. Cook until the onion is translucent, about 3-4 minutes.
- Stir in the bell pepper, diced tomatoes, corn, chili powder, cumin, salt, and pepper. Mix well and bring to a simmer.
- Reduce heat to low and let it cook for 10 minutes, stirring occasionally.
- If desired, sprinkle shredded cheese on top and cover until melted.
- Serve warm, garnished with fresh cilantro if desired.
