Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 1 tablespoon vegetable oil
  • 1 teaspoon cumin seeds
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 bell pepper, chopped
  • 1 cup mixed vegetables (carrots, peas, beans)
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a pot, bring 2 cups of water to a boil. Add basmati rice, cover, and simmer for 15 minutes or until water is absorbed and rice is fluffy.
  2. In a large skillet, heat vegetable oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  3. Add chopped onion, garlic, and ginger. Sauté until the onion is translucent.
  4. Add bell pepper and mixed vegetables. Cook for 5-7 minutes until they are tender.
  5. Stir in garam masala and salt. Mix well and cook for another minute.
  6. Serve the vegetable mixture over the cooked basmati rice, garnished with fresh cilantro.
