Ingredients

- 2 cups fresh blueberries
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 2 tablespoons cornstarch
- 1/2 teaspoon salt
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract (for whipped cream)
- Graham crackers or shortbread cookies (for serving)
Instructions
- In a medium saucepan, combine blueberries, granulated sugar, lemon juice, and vanilla extract over medium heat.
- Cook, stirring occasionally, until the blueberries start to burst and release their juices, about 5 minutes.
- In a small bowl, mix cornstarch and salt with 2 tablespoons of water until smooth. Stir this mixture into the blueberry mixture.
- Continue to cook for another 2-3 minutes until the sauce thickens. Remove from heat and let it cool.
- In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- To serve, layer the blueberry sauce with whipped cream in cups or bowls. Crumble graham crackers or shortbread cookies on top for added crunch.
Notes
- You can use frozen blueberries if fresh ones are not available; just thaw and drain excess liquid before cooking.
- Feel free to adjust the sugar based on the sweetness of the blueberries.
