Instructions

  1. In a medium saucepan, combine blueberries, granulated sugar, lemon juice, and vanilla extract over medium heat.
  2. Cook, stirring occasionally, until the blueberries start to burst and release their juices, about 5 minutes.
  3. In a small bowl, mix cornstarch and salt with 2 tablespoons of water until smooth. Stir this mixture into the blueberry mixture.
  4. Continue to cook for another 2-3 minutes until the sauce thickens. Remove from heat and let it cool.
  5. In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  6. To serve, layer the blueberry sauce with whipped cream in cups or bowls. Crumble graham crackers or shortbread cookies on top for added crunch.

Notes

  • You can use frozen blueberries if fresh ones are not available; just thaw and drain excess liquid before cooking.
  • Feel free to adjust the sugar based on the sweetness of the blueberries.
