- 2 medium zucchinis, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, sliced
- 1 cup cherry tomatoes, halved
- 3 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 4 cups mixed greens
- 1/4 cup balsamic vinaigrette
- 1/4 cup feta cheese, crumbled (optional)
Instructions
- Preheat the grill to medium-high heat.
- In a large bowl, combine zucchinis, bell peppers, red onion, cherry tomatoes, olive oil, garlic powder, oregano, salt, and pepper. Toss to coat the vegetables evenly.
- Place the vegetables on the grill and cook for about 5-7 minutes, turning occasionally, until they are tender and have grill marks.
- Remove the vegetables from the grill and let them cool slightly.
- In a large serving bowl, add mixed greens. Top with grilled vegetables and drizzle with balsamic vinaigrette.
- Sprinkle with feta cheese if desired, and serve immediately.
