A refreshing pasta salad with a tangy dill pickle flavor, perfect for summer gatherings or as a side dish.
Ingredients

- 8 oz (225 g) pasta (elbow or shell)
- 1 cup (240 ml) dill pickles, diced
- 1/2 cup (120 ml) dill pickle juice
- 1/2 cup (120 ml) mayonnaise
- 1/4 cup (60 ml) sour cream
- 1/4 cup (60 ml) red onion, finely chopped
- 1/4 cup (60 ml) bell pepper, diced
- 1 tablespoon (15 g) fresh dill, chopped
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and rinse under cold water until cool.
- In a large bowl, combine the cooked pasta, diced dill pickles, and red onion.
- In a separate bowl, whisk together the dill pickle juice, mayonnaise, sour cream, and chopped dill.
- Pour the dressing over the pasta salad mixture and stir until evenly coated.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add other ingredients like celery, carrots, or hard-boiled eggs for extra flavor and texture.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
