- 1 lb fresh strawberries
- 1/4 cup granulated sugar
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter
- 1 cup heavy cream
- 1 tsp vanilla extract
- 2 tbsp powdered sugar
Instructions
- Preheat the oven to 425°F (220°C).
- In a mixing bowl, combine sliced strawberries and granulated sugar. Toss to coat and let sit for 30 minutes.
- In another bowl, whisk together flour, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Add heavy cream and mix until just combined.
- Turn the dough onto a floured surface and knead gently. Pat into a 1-inch thick rectangle.
- Cut out biscuits with a round cutter and place them on a baking sheet.
- Bake for 12-15 minutes or until golden.
- In a separate bowl, whip the chilled heavy cream with vanilla extract and powdered sugar until soft peaks form.
- To assemble, split biscuits in half, layer with strawberries and whipped cream, and top with the other half of the biscuit.
Notes
- For added flavor, you can mix some lemon zest with the strawberries.
- This dessert is best served immediately but can be made a few hours in advance.
