Description

Ingredients

  • 1 lb fresh strawberries
  • 1/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 2 tbsp powdered sugar

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, combine sliced strawberries and granulated sugar. Toss to coat and let sit for 30 minutes.
  3. In another bowl, whisk together flour, baking powder, and salt.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Add heavy cream and mix until just combined.
  6. Turn the dough onto a floured surface and knead gently. Pat into a 1-inch thick rectangle.
  7. Cut out biscuits with a round cutter and place them on a baking sheet.
  8. Bake for 12-15 minutes or until golden.
  9. In a separate bowl, whip the chilled heavy cream with vanilla extract and powdered sugar until soft peaks form.
  10. To assemble, split biscuits in half, layer with strawberries and whipped cream, and top with the other half of the biscuit.
