Ingredients

  • 34 pounds beef chuck roast
  • 1 packet Italian dressing mix
  • 1 jar (16 oz) pepperoncini peppers, with juice
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Hoagie rolls or sandwich buns for serving

Instructions

  1. Place the beef chuck roast in the crockpot.
  2. Sprinkle the Italian dressing mix over the roast.
  3. Add the pepperoncini peppers with their juice, diced tomatoes, sliced onion, and minced garlic on top of the roast.
  4. Season with salt and pepper to taste.
  5. Cover and cook on low for 8-10 hours or on high for 4-6 hours, until the beef is tender and shreds easily.
  6. Once cooked, shred the beef in the crockpot using two forks, mixing it with the juices.
  7. Serve on hoagie rolls or sandwich buns, topped with additional pepperoncini if desired.
