- 3–4 pounds beef chuck roast
- 1 packet Italian dressing mix
- 1 jar (16 oz) pepperoncini peppers, with juice
- 1 can (14 oz) diced tomatoes, undrained
- 1 onion, sliced
- 4 cloves garlic, minced
- Salt and pepper to taste
- Hoagie rolls or sandwich buns for serving
Instructions
- Place the beef chuck roast in the crockpot.
- Sprinkle the Italian dressing mix over the roast.
- Add the pepperoncini peppers with their juice, diced tomatoes, sliced onion, and minced garlic on top of the roast.
- Season with salt and pepper to taste.
- Cover and cook on low for 8-10 hours or on high for 4-6 hours, until the beef is tender and shreds easily.
- Once cooked, shred the beef in the crockpot using two forks, mixing it with the juices.
- Serve on hoagie rolls or sandwich buns, topped with additional pepperoncini if desired.
