Description

Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1/4 cup olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon cayenne pepper
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup lemon juice
  • Pita bread, for serving
  • Fresh toppings: lettuce, tomatoes, cucumbers, red onion, and tahini sauce

Instructions

  1. In a large bowl, mix together olive oil, cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper, garlic, salt, black pepper, and lemon juice.
  2. Add the chicken thighs to the bowl, ensuring they are well-coated with the spice mixture.
  3. Transfer the chicken and any remaining marinade to the crockpot.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender and easily shredded.
  5. Once cooked, shred the chicken using two forks and mix it with the juices in the crockpot.
  6. Serve the chicken in pita bread with your choice of fresh toppings and tahini sauce.

Notes

  • For extra flavor, marinate the chicken in the spice mixture overnight in the refrigerator before cooking.
  • Serve with a side of rice or a simple salad for a complete meal.
