Description
Deliciously spiced chicken cooked to perfection in a crockpot, served with pita bread and fresh toppings.

- 2 lbs boneless, skinless chicken thighs
- 1/4 cup olive oil
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 tablespoon paprika
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1 teaspoon cayenne pepper
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup lemon juice
- Pita bread, for serving
- Fresh toppings: lettuce, tomatoes, cucumbers, red onion, and tahini sauce
Instructions
- In a large bowl, mix together olive oil, cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper, garlic, salt, black pepper, and lemon juice.
- Add the chicken thighs to the bowl, ensuring they are well-coated with the spice mixture.
- Transfer the chicken and any remaining marinade to the crockpot.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender and easily shredded.
- Once cooked, shred the chicken using two forks and mix it with the juices in the crockpot.
- Serve the chicken in pita bread with your choice of fresh toppings and tahini sauce.
Notes
- For extra flavor, marinate the chicken in the spice mixture overnight in the refrigerator before cooking.
- Serve with a side of rice or a simple salad for a complete meal.
- Leftover chicken can be stored in the refrigerator for up to 3 days.
