Ingredients

  • 12 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 cup diced cooked ham, sausage, or bacon
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 4 cups frozen hash browns
  • Non-stick cooking spray

Instructions

  1. Spray the inside of your crockpot with non-stick cooking spray.
  2. In a large mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  3. Layer the frozen hash browns at the bottom of the crockpot.
  4. Add the diced bell peppers, onions, and cooked meat over the hash browns.
  5. Pour the egg mixture evenly over the layers in the crockpot.
  6. Sprinkle the shredded cheese on top.
  7. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the eggs are set and cooked through.
  8. Once done, let it cool for a few minutes before slicing into squares and serving.
