- 2 pounds beef chuck, cut into 1-inch cubes
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large skillet, heat olive oil over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes.
- Transfer the browned beef to the crockpot. Add carrots, potatoes, onion, and garlic.
- Pour in the beef broth and Worcestershire sauce. Add thyme, rosemary, salt, and pepper.
- Stir to combine all ingredients. Cover and cook on low for 8-10 hours or high for 4-5 hours, until the beef is tender.
