This delicious crock pot beef recipe is perfect for a hearty meal. The beef is slow-cooked until tender, infused with savory flavors, and pairs beautifully with vegetables.

- 2 pounds beef chuck roast
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Heat the olive oil in a skillet over medium-high heat. Sear the beef chuck roast on all sides until browned. Remove from heat.
- Place the chopped onion and minced garlic in the bottom of the crock pot.
- Add the sliced carrots and diced potatoes on top of the onions and garlic.
- Place the seared beef on top of the vegetables.
- In a bowl, mix together the beef broth, Worcestershire sauce, thyme, rosemary, salt, and pepper. Pour this mixture over the beef.
- Cover the crock pot and cook on low for 8 hours or high for 4 hours, until the beef is tender.
- Once cooked, remove the beef from the crock pot and let it rest for a few minutes before slicing. Serve with the vegetables and broth.
Notes
- You can add other vegetables like peas or green beans during the last hour of cooking for added flavor.
- For a thicker gravy, remove some of the broth and mix with cornstarch before returning it to the pot.
