Ingredients

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium-high heat. Sear the beef chuck roast on all sides until browned. Remove from heat.
  2. Place the chopped onion and minced garlic in the bottom of the crock pot.
  3. Add the sliced carrots and diced potatoes on top of the onions and garlic.
  4. Place the seared beef on top of the vegetables.
  5. In a bowl, mix together the beef broth, Worcestershire sauce, thyme, rosemary, salt, and pepper. Pour this mixture over the beef.
  6. Cover the crock pot and cook on low for 8 hours or high for 4 hours, until the beef is tender.
  7. Once cooked, remove the beef from the crock pot and let it rest for a few minutes before slicing. Serve with the vegetables and broth.

Notes

  • You can add other vegetables like peas or green beans during the last hour of cooking for added flavor.
  • For a thicker gravy, remove some of the broth and mix with cornstarch before returning it to the pot.
