- 4 boneless, skinless chicken breasts
- 1 cup cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1 cup breadcrumbs
- 2 eggs, beaten
- Olive oil, for drizzling
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix together the cream cheese, mozzarella, Parmesan, parsley, garlic powder, onion powder, salt, and pepper until well combined.
- Butterfly each chicken breast by slicing it horizontally, but not all the way through. Open it up like a book.
- Spread a generous amount of the cheese mixture into each chicken breast. Fold the chicken over to close it.
- Set up a breading station with one bowl for the beaten eggs and another for the breadcrumbs.
- Dip each stuffed chicken breast into the egg, then coat with breadcrumbs, pressing gently to adhere.
- Place the breaded chicken breasts on a baking sheet lined with parchment paper. Drizzle olive oil over the tops.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the coating is crispy.
- Remove from the oven and let rest for a few minutes before slicing. Serve warm.
Notes
- You can add spinach or sun-dried tomatoes to the cheese mixture for extra flavor.
- Make sure to fully seal the chicken to prevent the cheese from leaking out during cooking.
- For an extra crispy coating, you can double-dip the chicken by repeating the egg and breadcrumb steps.
