- 1.5 pounds baby potatoes, washed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Place the baby potatoes in a large pot of salted water and bring to a boil. Cook for about 15-20 minutes, or until fork-tender.
- Drain the potatoes and let them cool slightly. Preheat your air fryer to 400°F (200°C).
- Once cooled, gently flatten each potato with a fork or the bottom of a cup until they are about 1/2 inch thick.
- In a large bowl, toss the smashed potatoes with olive oil, garlic powder, onion powder, salt, and pepper until evenly coated.
- Place the potatoes in a single layer in the air fryer basket. Cook for 12-15 minutes, flipping halfway through, until crispy and golden brown.
- Remove from the air fryer and garnish with fresh parsley before serving.
Notes
- For extra flavor, try adding grated Parmesan cheese before air frying.
- Make sure not to overcrowd the air fryer basket; cook in batches if necessary.
