Ingredients

- 1 cup long-grain rice
- 2 cups water
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1/2 cup grated parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp dried basil
Instructions
- Rinse rice under cold water.
- Heat olive oil in a pan and sauté onion until soft.
- Add garlic and cook for 30 seconds.
- Stir in rice, tomatoes, salt, pepper, and basil.
- Pour water and bring to a boil.
- Cover, reduce heat, and simmer for 15 minutes.
- Remove from heat, sprinkle parmesan, and let sit covered for 5 minutes.
- Fluff rice with a fork before serving.
Notes
- Use fresh parmesan for best flavor.
- Adjust salt to taste.
