- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup vegetable oil for frying
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Place each chicken breast between two sheets of plastic wrap and pound them to an even thickness, about 1/2 inch thick.
- Set up a breading station: in one bowl, add the flour. In a second bowl, beat the eggs. In a third bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
- Coat each chicken breast in flour, shaking off any excess. Dip it into the beaten eggs, then coat it with the breadcrumb mixture, pressing gently to adhere.
- In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the chicken cutlets in batches, cooking for about 3-4 minutes on each side, or until golden brown and cooked through.
- Transfer the cooked cutlets to a baking sheet and place in the oven for 5-10 minutes to ensure they are cooked through.
- Garnish with fresh parsley if desired and serve warm.
Notes
- For extra crunch, you can mix some crushed cornflakes with the breadcrumbs.
- Feel free to add your favorite herbs or spices to the breadcrumb mixture for added flavor.
