Ingredients

  • 2 pounds chicken wings
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup all-purpose flour
  • 1/2 cup buttermilk
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper.
  2. Add the chicken wings to the bowl and toss until well coated with the spice mixture.
  3. Pour the buttermilk over the wings and allow to marinate for at least 30 minutes, or up to 2 hours in the refrigerator for deeper flavor.
  4. In a separate bowl, place the all-purpose flour.
  5. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  6. Remove the wings from the buttermilk, allowing excess to drip off, then dredge in the flour, making sure they are fully coated.
  7. Fry the wings in batches for about 8-10 minutes, or until golden brown and crispy. Make sure not to overcrowd the pot.
  8. Remove the wings from the oil and place on a wire rack or paper towels to drain excess oil.
  9. Serve hot with your favorite dipping sauce.
