Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • 2 tbsp Dijon mustard
  • 1 tsp lemon juice
  • 1/4 tsp dried thyme

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper in a bowl.
  3. Beat eggs in a separate bowl.
  4. Dip chicken breasts in eggs, then coat with breadcrumb mixture.
  5. Heat olive oil in a skillet over medium heat. Cook chicken until golden brown, about 3 minutes per side.
  6. Transfer chicken to a baking dish and bake for 15 minutes.
  7. In the same skillet, whisk heavy cream, Dijon mustard, lemon juice, and thyme. Simmer for 3 minutes.
  8. Pour sauce over baked chicken and serve.
