Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken breasts with salt and pepper, then cook until golden brown, about 5-6 minutes per side. Remove and set aside.
  3. In the same skillet, sauté garlic until fragrant.
  4. Add sun-dried tomatoes and spinach, cooking until spinach wilts.
  5. Pour in chicken broth and heavy cream, stirring well.
  6. Simmer for 3-4 minutes until slightly thickened.
  7. Stir in Parmesan cheese and Italian seasoning.
  8. Return chicken to the skillet and coat with sauce.
  9. Cook for an additional 2 minutes until heated through.
  10. Serve hot.
