- 8 oz (225 g) pasta of your choice
- 2 tablespoons olive oil
- 1 lb (450 g) chicken breast, diced
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup (240 ml) heavy cream
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/2 cup (50 g) grated Parmesan cheese
- Fresh basil for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.
- In the same skillet, add the onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Add the canned tomatoes (with their juices), heavy cream, dried basil, and dried oregano. Stir to combine and bring to a simmer.
- Return the chicken to the skillet and simmer for another 5 minutes, allowing the sauce to thicken.
- Add the cooked pasta to the skillet and toss to coat in the creamy tomato sauce.
- Stir in the grated Parmesan cheese until melted and well combined.
- Serve immediately, garnished with fresh basil.
Notes
- For extra flavor, consider adding red pepper flakes for heat.
- You can substitute the chicken for shrimp or tofu for a different protein option.
- This dish can be made ahead of time and reheated, but it’s best enjoyed fresh.
