Ingredients

  • 8 oz (225 g) pasta of your choice (fettuccine or penne recommended)
  • 2 salmon fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Red pepper flakes (optional, for heat)
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season the salmon fillets with salt and pepper, and cook for 4-5 minutes on each side or until cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  5. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted and combined. Season with salt, pepper, and red pepper flakes if desired.
  6. Add the cooked pasta to the skillet and toss to combine with the creamy sauce.
  7. Flake the cooked salmon and gently fold it into the pasta.
  8. Serve immediately, garnished with fresh parsley if desired.
