- 8 oz (225 g) pasta of your choice (fettuccine or penne recommended)
- 2 salmon fillets (about 6 oz each)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 4 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Red pepper flakes (optional, for heat)
- Fresh parsley for garnish (optional)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season the salmon fillets with salt and pepper, and cook for 4-5 minutes on each side or until cooked through. Remove from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted and combined. Season with salt, pepper, and red pepper flakes if desired.
- Add the cooked pasta to the skillet and toss to combine with the creamy sauce.
- Flake the cooked salmon and gently fold it into the pasta.
- Serve immediately, garnished with fresh parsley if desired.

- Feel free to substitute any pasta shape you like.
- You can use canned or smoked salmon if fresh is not available.
