Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup pesto sauce
  • 1/2 cup heavy cream
  • 2 cups baby potatoes, halved
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with olive oil, salt, pepper, garlic powder, and paprika. Spread on a baking sheet.
  3. Roast potatoes for 25 minutes, flipping halfway.
  4. Season chicken with salt and pepper. Cook in a skillet over medium heat for 6-7 minutes per side.
  5. Reduce heat, add pesto and heavy cream to the skillet. Simmer for 3-4 minutes.
  6. Serve chicken with sauce over roasted potatoes.

Notes

  • You can use store-bought or homemade pesto.
  • For extra flavor, add grated Parmesan to the sauce.
