Ingredients

- 2 boneless, skinless chicken breasts
- 1/4 cup pesto sauce
- 1/2 cup heavy cream
- 2 cups baby potatoes, halved
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp paprika
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, salt, pepper, garlic powder, and paprika. Spread on a baking sheet.
- Roast potatoes for 25 minutes, flipping halfway.
- Season chicken with salt and pepper. Cook in a skillet over medium heat for 6-7 minutes per side.
- Reduce heat, add pesto and heavy cream to the skillet. Simmer for 3-4 minutes.
- Serve chicken with sauce over roasted potatoes.
Notes
- You can use store-bought or homemade pesto.
- For extra flavor, add grated Parmesan to the sauce.
- Ensure chicken reaches an internal temperature of 165°F (74°C).
