- 2 boneless, skinless chicken breasts
- 1 cup sliced mushrooms
- 1/2 cup heavy cream
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 cup long-grain rice
- 2 cups chicken broth
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a pan over medium heat. Cook the chicken until golden, then set aside.
- In the same pan, sauté onions and garlic until soft.
- Add mushrooms and cook until tender.
- Pour in the heavy cream and stir to combine. Simmer for 3 minutes.
- Return the chicken to the pan and cook for another 5 minutes.
- For the rice, rinse it under cold water.
- In a pot, bring chicken broth to a boil. Add rice, thyme, and rosemary.
- Cover and simmer for 15 minutes, or until rice is cooked.
- Serve the creamy mushroom chicken over the herb rice.

- Use fresh herbs for a stronger flavor.
- Adjust cream thickness by adding more broth if needed.
- Let the chicken rest before slicing for juicier results.
