Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup sliced mushrooms
  • 1/2 cup heavy cream
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a pan over medium heat. Cook the chicken until golden, then set aside.
  3. In the same pan, sauté onions and garlic until soft.
  4. Add mushrooms and cook until tender.
  5. Pour in the heavy cream and stir to combine. Simmer for 3 minutes.
  6. Return the chicken to the pan and cook for another 5 minutes.
  7. For the rice, rinse it under cold water.
  8. In a pot, bring chicken broth to a boil. Add rice, thyme, and rosemary.
  9. Cover and simmer for 15 minutes, or until rice is cooked.
  10. Serve the creamy mushroom chicken over the herb rice.
