Ingredients

- 2 boneless, skinless chicken breasts
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp butter
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 lb baby potatoes, halved
- 2 tbsp hot honey
- 1 tbsp chopped parsley
Instructions
- Preheat oven to 400°F.
- Toss potatoes with olive oil, salt, and pepper. Roast for 25 minutes.
- Drizzle hot honey over potatoes and roast 5 more minutes.
- Season chicken with salt and pepper.
- Heat butter and oil in a pan. Cook chicken until browned.
- Remove chicken and sauté mushrooms and garlic.
- Add cream and Parmesan, simmer until thickened.
- Slice chicken and return to sauce.
- Serve chicken Alfredo with roasted potatoes.
- Garnish with parsley.
