Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 lb baby potatoes, halved
  • 2 tbsp hot honey
  • 1 tbsp chopped parsley

Instructions

  1. Preheat oven to 400°F.
  2. Toss potatoes with olive oil, salt, and pepper. Roast for 25 minutes.
  3. Drizzle hot honey over potatoes and roast 5 more minutes.
  4. Season chicken with salt and pepper.
  5. Heat butter and oil in a pan. Cook chicken until browned.
  6. Remove chicken and sauté mushrooms and garlic.
  7. Add cream and Parmesan, simmer until thickened.
  8. Slice chicken and return to sauce.
  9. Serve chicken Alfredo with roasted potatoes.
  10. Garnish with parsley.
