Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 medium potatoes, diced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced potatoes with olive oil, thyme, salt, and pepper. Spread on a baking sheet.
  3. Roast potatoes for 20 minutes, flipping halfway.
  4. Season chicken with salt and pepper. Cook in a skillet over medium heat for 6-7 minutes per side.
  5. Remove chicken and sauté garlic in the same skillet for 30 seconds.
  6. Pour in heavy cream, simmer for 2 minutes. Stir in Parmesan.
  7. Return chicken to the skillet, coat with sauce. Serve with roasted potatoes.
