- 1 lb shrimp, peeled and deveined
- 1 can (14 oz) coconut milk
- 1 cup jasmine rice
- 2 tbsp red curry paste
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 red bell pepper, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp vegetable oil
- Fresh cilantro for garnish
- 1 lime, cut into wedges
Instructions
- Cook jasmine rice according to package instructions.
- Heat oil in a large pan over medium heat. Add onion, garlic, and ginger. Cook until fragrant.
- Add red curry paste and stir for 1 minute.
- Pour in coconut milk, fish sauce, and brown sugar. Stir well.
- Add shrimp and red bell pepper. Simmer for 5-7 minutes until shrimp is cooked.
- Serve over jasmine rice. Garnish with cilantro and lime wedges.
Notes
- Adjust curry paste for more or less spice.
- Add vegetables like zucchini or spinach if desired.
- Use lime juice for extra freshness.
