Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 can (14 oz) coconut milk
  • 1 cup jasmine rice
  • 2 tbsp red curry paste
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 red bell pepper, sliced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp vegetable oil
  • Fresh cilantro for garnish
  • 1 lime, cut into wedges

Instructions

  1. Cook jasmine rice according to package instructions.
  2. Heat oil in a large pan over medium heat. Add onion, garlic, and ginger. Cook until fragrant.
  3. Add red curry paste and stir for 1 minute.
  4. Pour in coconut milk, fish sauce, and brown sugar. Stir well.
  5. Add shrimp and red bell pepper. Simmer for 5-7 minutes until shrimp is cooked.
  6. Serve over jasmine rice. Garnish with cilantro and lime wedges.
