A delicious and creamy chicken dish with sun-dried tomatoes that is perfect for a weeknight dinner.

- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
- Add chicken breasts to the skillet and cook until golden brown and cooked through, about 6-7 minutes per side. Remove chicken from the skillet and set aside.
- In the same skillet, add chicken broth and sun-dried tomatoes, scraping up any browned bits from the bottom of the pan.
- Stir in heavy cream and bring to a simmer. Allow to cook for a few minutes until slightly thickened.
- Return the chicken to the skillet and coat with the creamy sauce. Cook for an additional 2-3 minutes to heat through.
- Serve warm, garnished with fresh basil if desired.
Notes
- Serve with pasta or rice to soak up the delicious sauce.
- You can use fresh tomatoes instead of sun-dried tomatoes for a different flavor.
- Leftovers can be stored in the refrigerator for up to 3 days.
