Description

A delicious and creamy pasta dish with Cajun-spiced chicken and sweet corn.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp Cajun seasoning
  • 8 oz penne pasta
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Season chicken with Cajun seasoning, salt, and pepper.
  3. Heat olive oil in a pan over medium heat. Cook chicken until browned and fully cooked (about 6-7 minutes per side). Remove and slice.
  4. In the same pan, sauté garlic until fragrant (about 30 seconds).
  5. Add corn and cook for 2 minutes.
  6. Pour in heavy cream and bring to a simmer.
  7. Stir in Parmesan cheese until melted.
  8. Add cooked pasta and sliced chicken. Toss to coat evenly.
  9. Serve hot.

Notes

  • Adjust Cajun seasoning for more or less spice.
  • Substitute half-and-half for a lighter version.
  • Add chopped parsley for garnish.
