Description
A delicious and creamy pasta dish with Cajun-spiced chicken and sweet corn.
Ingredients

- 2 boneless, skinless chicken breasts
- 1 tbsp Cajun seasoning
- 8 oz penne pasta
- 1 cup corn kernels (fresh or frozen)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Season chicken with Cajun seasoning, salt, and pepper.
- Heat olive oil in a pan over medium heat. Cook chicken until browned and fully cooked (about 6-7 minutes per side). Remove and slice.
- In the same pan, sauté garlic until fragrant (about 30 seconds).
- Add corn and cook for 2 minutes.
- Pour in heavy cream and bring to a simmer.
- Stir in Parmesan cheese until melted.
- Add cooked pasta and sliced chicken. Toss to coat evenly.
- Serve hot.
Notes
- Adjust Cajun seasoning for more or less spice.
- Substitute half-and-half for a lighter version.
- Add chopped parsley for garnish.
