- 2 boneless, skinless chicken breasts
- 1 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 cup heavy cream
- 1/2 cup chicken broth
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Season the chicken breasts with Cajun seasoning, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Cook the chicken for 6-7 minutes per side until fully cooked. Remove and set aside.
- In the same skillet, add corn and bell peppers. Sauté for 4-5 minutes.
- Pour in heavy cream and chicken broth. Stir well.
- Add garlic powder and simmer for 3-4 minutes until slightly thickened.
- Return the chicken to the skillet and coat with the sauce. Serve hot.
Notes
- Adjust Cajun seasoning to taste.
- Use fresh corn for better flavor.
- Garnish with fresh parsley if desired.
