- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup frozen peas and carrots
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until the onion is translucent.
- Add the chicken pieces to the skillet and season with thyme, rosemary, paprika, salt, and pepper. Cook until the chicken is browned on all sides.
- Stir in the rice, chicken broth, and frozen peas and carrots. Bring to a boil.
- Transfer the mixture to a greased 9×13 inch baking dish and cover tightly with aluminum foil.
- Bake in the preheated oven for 25 minutes, then remove the foil and bake for an additional 10-15 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from the oven and sprinkle with shredded cheddar cheese. Cover and let it sit for 5 minutes to melt the cheese.
- Serve warm and enjoy your cozy fall dinner!
Notes
- Feel free to substitute the chicken thighs with chicken breasts if preferred.
- You can add other vegetables like bell peppers or corn for added flavor.
