Ingredients

  • 2 cups cooked corned beef, chopped
  • 2 cups potatoes, diced (preferably Yukon Gold or red potatoes)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • 2 large eggs (optional, for topping)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat.
  2. Add the diced potatoes and cook for about 10 minutes, stirring occasionally, until they start to brown.
  3. Add the diced onion and cook for another 5 minutes, until the onion is soft.
  4. Stir in the minced garlic and cook for an additional minute.
  5. Add the chopped corned beef to the skillet, mixing it with the potatoes and onions. Cook for another 5-7 minutes, allowing the mixture to get crispy, stirring occasionally.
  6. Season with salt and pepper to taste.
  7. If using eggs, you can either fry them separately or create wells in the hash and crack the eggs into those wells. Cover the skillet and cook until the eggs are done to your liking.
  8. Serve hot, garnished with fresh parsley.

Notes

  • Feel free to add bell peppers or spices for extra flavor.
  • Corned beef hash is great for using up leftover corned beef from St. Patrick’s Day!
